My Aunt Jennifer makes the most delicious, moist pumpkin bread ever. I don’t even really like ‘pumpkiny’ stuff either. That is how good this bread is! When I visit my parents during the holidays, I usually find a loaf that has been delivered, and my mother always shares a piece or two with me.
I asked Jennifer for the recipe because it is a must share. This pumpkin bread doesn’t require fancy ingredients and it is simple to stir up, making it a perfect recipe to make with your kids.
I have many happy, holiday memories of cooking with my grandma. She would scold me a bit when I dumped flour all over the table, but would help me clean it up, and we would be back in business. I encourage you to cook with your kids. Though it can be a bit challenging (just ask my grandma) it is a memory maker.
The first time I made Jennifer’s bread, I was running so short on baking time I decided to pour the bread batter into a 13×9 inch cake pan so it would bake more quickly, thus becoming pumpkin cake. I then iced it with cream cheese frosting and topped it with walnuts. It was a hit!
Making Pumpkin Bread
Measure and sift together the dry ingredients and then give them a stir:
Add all of the wet ingredients: oil, eggs, water, and pumpkin and stir it until the lumps are gone…
Pour the mixture into the cake pans and bake. Again…this is an amazing recipe and so easy too. Whether it is in bread or cake form, it is moist and delicious!

Cooking supports literacy, math, and fine motor skills. It is bonding time with our kids; and a wonderful memory maker. It teaches teamwork, following directions, problem solving, responsibility, and daily living skills.

Aunt Jennifer’s Amazing Pumpkin Bread
Ingredients
- 3 ½ C. flour
- 2 tsp soda
- 1 ½ tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 3 cups sugar
- 1 cup of vegetable oil
- 4 eggs
- 2/3 cup water
- 2 cups pumpkin
Instructions for the Pumpkin Batter
- Sift dry ingredients into large mixing bowl
- Add all remaining ingredients
- Mix until smooth.
Baking Option One ~ Pumpkin Bread
- Pour into 2 loaf pans, 9x5x3 inches, that have been greased & floured or you can use smaller pans as well
- Bake at 350 for 1 hour & 15 minutes if using larger pans
- If you are using the smaller pans, check them at 40 minutes
- Cool & removed from pans
- This recipe freezes well.
Baking Option Two ~ Pumpkin Cake
- Pour the batter into a 13×9 inch greased and floured cake pan
- Bake it for 35-40 minutes at 350 degrees or until a toothpick come out clean. Just be careful to not over bake it.
